Ok, thanks to the Brochure Scans on here, combined with my own knowledge, this is what I've got so far:

Mk I Escort:
  • XL
  • L
  • Twin Cam
  • Mexico*

  • RS2000*

Engines (all 4 cylinder):
  • 1100cc Crossflow Kent
  • 1300cc Crossflow Kent
  • 1300cc Crossflow Kent High Compression
  • 1600cc Lotus Twin Cam (only in Escort Twin Cam)
  • Cosworth DOHC crossflow (only in 'sports' models denoted with a *, not in Twin Cam, various cc)

Mk II Escort:
  • Ghia
  • GL
  • XL
  • L
  • Mexico*
  • RS1800*
  • RS2000

Engines (all 4 cylinder):
  • 1100cc Crossflow Kent
  • 1300cc Crossflow Kent
  • 1300cc Crossflow Kent High Compression
  • 1600cc Crossflow Kent
  • 1600cc Crossflow Kent High Compression
  • 2000cc Crossflow Pinto
  • 2000cc Crossflow Pinto High Compression
  • Cosworth DOHC crossflow (only in 'sports' models denoted with a *, various cc)

Any obvious mistakes so far, or anything missing? For now I'm concentrating on the Aussie Escorts, so the Mk I and II models which were available here, as well as the sports models for competition.
