when it's relaxed, easy going, straight line, not many cars nearby - one hand on the wheel, one resting near gearstick. For cornering, busier traffic that demands better attention, 2 hands at 10 & 2. I also have the seat fairly upright to enable me to drive with my arms bent as recommended, despite my head being very close to the roof. The better back support enables more control.
