I'm assuming you mean with a flash tuner. But apart from the mainland you are pretty limited here in Tassie. You could try Howell Automotive in Hobart or there is a new place in Ulverstone called Confidyne and I think the can do the flash tuning.

If you are talking with something else they could probably still help you, but I'm sure there are one or two other places that are about. I've just had no experience with anything else.

If you are in Hobart area I really recommend GT Garage on Lampton ave Derwent Park. Really really nice guys, good service, honest, and best of all they take the time to really talk to you and find out what you want and explain exactly how/what they will do and what effect it will have. I have had really great experiences dealing with them.
